Honey Cake

Ingredients

1 ¾ cups dark honey

1 cup double strength coffee

4 eggs

2 tablespoons canola oil

1 cup sugar

3 ½ cups flour

Dash of salt

1 teaspoon baking soda

2 teaspoons baking powder

1 teaspoon allspice

1 teaspoon cinnamon


Directions

Heat oven to 300-325℉.

In a small saucepan gently bring honey to a boil.

When it reaches a boil, cool the honey.

Add coffee to the honey.

In a large mixing bowl beat the eggs until light and lemon colored.

Continue beating the eggs and gradually add in oil.

Continue to mix while sprinkling sugar into the egg mixture.

Sift together dry ingredients into a small bowl.

Add the dry ingredients and honey mixture alternately in thirds to the egg mixture while mixing well.

When batter is smooth pour into a greased and lined rectangular pan.

Bake for about an hour.

Invert and cool in the pan.

Cut into diamond shapes as per tradition. Make straight parallel cuts about 2 inches apart. Rotate the pan 90 degrees and make diagonal cuts about 2 inches apart to make diamonds.
